First photo I have posted in decades. Oh my goodness right?! So I have recently gotten into baking more and more and the more I do it the more I want to try new things and modify old methods. This is the first 3 tiered cake I have made by myself. (Without mamas help)…

I did lots of research on types of cakes and flours and special tips and tricks for getting your cake to look fabulous. I’m all about presentation so not only does it HAVE to taste good, but it must look like it belongs in a bakery. (At least somewhat). Much like photography, baking is an art that you must try an fail and try again to get what you want. I started this at 11 pm and finished at 4 am!!!! Yup, my roommates actually got up to get ready to go to work as I was headed to bed. So anyways, lets get to the technicals of the cake.

This is a 3 tiered dark and semi sweet chocolate flavored cake with a hint of espresso. The layers are filled with a raspberry compote and the cake is topped with a thin layer of chocolate ganache. The frosting is an Italian version of raspberry vanilla buttercream. This buttercream is tastier in my opinion than the American buttercream, but the method took much more time. I was afraid I was going to over boil the sugar, but it came out perfect!!! Whew!!! All in all I think I did good. What do you guys think?

The Jess Lighting Mini shoot. I took about 3 shots of this pose and it turned out this one was my favorite. But somehow her pup Wookie snuck into the back. Thank goodness for photoshop :) it’s a learning process but I’m excited for more learning curves to come

Haven’t posted in awhile. School has been kicking my butt, but yesterday I had the pleasure of working with Jessikah on a mini shoot. This was one of my favorites. Today I have a family portrait to shoot, so wish me luck!
